So it's time to make a classic Italian sauce, a cream and butter sauce or what's popularly known as an Alfredo
0:08
I'm going to make it with some shrimp and bacon. Let's get started right now
0:12
So I'll be using some jumbo shrimp for this recipe. So go ahead and de-frost it. You got it frozen
0:20
In my case it was fresh, so go ahead and peel the shell off. I like to kind of break that tail end of the shell and then kind of pull it
0:29
pull it out of the flesh. Also, be sure to check if the vein or the digestive track of the shrimp is still there, and
0:38
if it's there, devane the shrimp. You don't want to be eating that
0:43
That part is not edible. Once you've done that, go ahead and rinse it, and we're going to marinate it with olive
0:50
oil, paprika, salt, pepper, some lime juice, and a minced clove of garlic
0:58
Set that marinate while you prepare the rest of the components for this dish
1:03
So next I'm going to start by cooking the bacon. As you might know already, I like to roll up and individually freeze my bacon
1:11
So the color stays nice and red and I can basically take out exactly what I need Now put the bacon strips onto a cold pan and then set that pan on medium heat
1:25
Now as that bacon is halfway cooked, add in your shrimp right into that pan
1:31
Don't add the marinade yet but don't discard it either. We're going to cook the shrimps for one to two minutes on each side until it changes its color and becomes pinker
1:41
And at this point the bacon would be infused with the flavors of the shrimp. with the flavors of the shrimp
1:45
So if you're going for this delicious seafood pasta, this is the perfect way to completely commit
1:51
the seafood flavor for a really nice seafoody bacon flavor. It's amazing
1:59
Once the bacon is crispy, you can take that out and to finish cooking that shrimp
2:04
add in all of the marinade right into that pan with all that bacon grease
2:10
Now you don't want to overcook that shrimp, so just set that pan
2:14
side and you can leave the shrimp on a plate or a wire rack while you're waiting for
2:19
your pasta and the alfredo sauce to be ready so make sure you season the pasta water
2:24
and then add in your portion of feruccini let that pasta get soft at the ends and then
2:30
twirl it with the help of tongs into the water and a tip for ferricini you don want the noodles to get stuck and that did used to happen to me a lot What you need is rapidly boiling water So once you twirled the pasta into the pot then cover the pot
2:47
just to make sure that water stays at a rolling boil. Now while that pasta is cooking, let's
2:53
start with our Alfredo sauce. So in my pan here I'm going to heat up my butter with my heavy
2:59
cream. Traditionally you use about a quarter cup per portion. But I do like my
3:05
portions creamier than usual. So I do tend to double the recipe. Instead of
3:10
quarter cup for one portion, I use half a cup of cream for one portion. So let that
3:17
butter and cream come up to a simmer and keep whisking as that happens. You're gonna cook
3:23
it for a minute or two or until the sauce thickens and if that happens before your
3:28
pasta is done, just sit that aside for now. As soon as your pasta is ready, add it to your
3:35
cream sauce and then bring it back up to a simmer then season it with salt pepper
3:40
and as it simmering also add in some nutmeg I'm using some fresh nutmeg which
3:47
I'm grading with the help of a microplane these things are very helpful and I can
3:52
link the ones that I using in the description box down below you only want to simmer that sauce until it taken slightly add in your Parmesan cheese Reserve some for the topping but add most of it
4:06
And take that pan off the heat. You don't want to cook that parmesan
4:09
You just want it to melt and meld with the sauce. Give it a really good mix until it's all nice and creamy
4:16
And now it's time to serve. Now I like to serve at a Cheney Alfredo with the help of a cave carving for
4:22
And then to top that pasta, add in your bake and bake. which I've chopped up here and then top with your shrimp
4:29
I like to keep my pan with that beautiful marinade on a low flame on the side
4:34
so that when I'm ready to serve, I can just quickly toss my shrimp in that warm marinade
4:42
which has thickened by now and then serve with all those beautiful flavors on the plate
4:47
So I really hope you guys like this simple and creamy pasta dish
4:51
I guess the only complicated part is getting it all together at the same
4:55
time in an efficient manner. So just follow the steps I've mentioned and you will be good to go
