um I was hired by a company that made um

space simulation Chambers and they had

taken a purchase order to make uh freeze

vacuum chamber and they learned very

quickly that that's not the case they

hired me to come on board to help them

figure that out it took me a couple of

years a very large investment on my part

nephew uh Troy who is now the vice

building for people okay we start out

with our um um intro unit which which

we've affectionately du dubbed our big

baby uh it's it's it's big compared to

the countertop systems but for us it's a

baby and that originally had 11

full-size baking trays and so that's a

capacity depending on the loading of the
5:25
tray starting in the 75 lb range that

was a turn ke system that basically you

could roll in a door fit through a

standard door plug it in everything's on

board and um we learned a lot from it

people love it um however it was noisier

than we liked and uh It produced a lot

of heat and so we did a gen two which we

call our bigger baby uh that has an

outside refrigeration unit the

refrigeration is set outside uh we have

lines that come in feeding the fluid to

the CH uh Chiller plates and um that is

much quieter the heat goes outside and

is uh the cost because when you buy a

difference is that the countertop

is the removable shelf uh in freeze

absolutely one of the big things is just

what we talked about with being able to

sanitize the shelves and the racks uh

that's a huge step forward so the uh

USDA loves that uh the U the customers

love that that's a big step forward and

being able to uh assure the the quality

and safety of the product uh the other

thing is is that our Chambers are washed

down uh the entire chamber can be on the

production floor so the entire chamber

can be washed down or like a lot of our

customers do just the access door is in

the processing room and the rest of the

chamber is behind that door and uh so

that's a a facilities area uh but still

they see our systems they're able to

pick up immediately what is going on and

what the benefits are and so it's very

easy for them to integrate our system

into their existing process where we

have customers that start with the uh

countertop systems there's a very

significant learning curve that they

have to go through in order to be able

to do this and so what we've uh tried to

do is make sure that we work hand inand

with our customers so that they know

exactly what is required for the

facility what's required for the um

utilities and then not only that how to

go about integrating our system into

their facilities so we'll actually go in

when we start talking to a customer and

they'll say well okay we want it in this

area we'll actually visit that

facility and we'll do a 3D model of the

facility we'll put a 3D model of our

products the chamber the chiller the

vacuum pump uh including all of the

piping so that they know exactly where

all of that needs to go and then we'll

work with them further on saying okay

now if you're doing this kind of a

aware that they need to have a packing

typically what we see is the most robust

are the companies that have their own
