In today's video is all about the butternut squash. It's also a collab with two lovely YouTubers

So the collaboration is we've all chosen a different vegetable. And the challenge is to cook it three different ways

So three recipes with the same veg. And like I said, we've all chosen something different

I've chosen the but and with squash. Now if you've been to my channel before, you know I really don't like cooking, so this is definitely a challenge for me and I've tried to choose three recipes that are fairly simple or what I hope are fairly simple

So let's get started with the first one. So the first recipe I'm going to do is butternut squash pancakes

Now I do like a pancake but I've never actually tried them with butternut squash before, which I thought was a little bit unusual

So for this recipe, which I got from a website called A Jar of Lemons

This recipe calls for some put-annock squash tubes, which I've bought in a bag already cut up

because I find but-lanut-knit squash really difficult to chop and peel. So I bought it in a bag

some eggs some maple syrup I've only got the Skinny Food Company

zero calorie maple syrup so that'll have to do it also says vanilla

which I don't have oat flour which I've never used before some bacon powder

some cinnamon some nutmeg and some salt it says to start by putting

the butter and its squash in a pot of it. cover with water bring to a boil then reduce to a low heat and simmer until the squash

is fork tender okay so I've cooked the butternut squash for about 15 to 20 minutes

and it said once done drain it which I've done and either mash really well or add to a

blender and puree until smooth so I need half a cup of the butternut squash puree

this is an American recipe look like I do have some measure

in cups so we'll get half a cup there make sure it's all pured I don't want lumpy pancakes

and it says whisk together in a bowl with the eggs maple syrup and vanilla now I don't have the

vanilla so we'll just put in the eggs and the maple syrup

in the oat flour, baking powder, cinnamon, nutmeg and salt. So I'll put the..

Now that part that looks a little bit thick and it said to add large eggs which I didn have in So I think I going to add another egg

Now I just need to add the batter to the pan and cook the pancakes. I'm using this pancake pan I got

about six years ago now and I've never used it. So let's hope it works

and we'll let that cook for one to two minutes and hopefully it turns out looking like a pancake

there's one pancake done we'll try another one so there's my nice stack of four in a tiny little one

pancakes but I'm squash pancakes they actually look quite good. I'm quite pleased with those

And I would serve that with some strawberries, some blackberries, and a little bit more of the maple syrup

How good does that look? The second butternut squash recipe I'm going to do

is a Cajun Spiced butternut squash soup. I do like a butler nut squash soup

and I've never actually made one myself before I don't think. so what I'm going to need for this is

some but on it squash it says peels you seeded and cut into chunks

which I've already done as you can see on the tree I need some vegetable oil which I don't have

I'm going to use olive oil hope that's just as good some caesar seasoning

a red onion some celery a red chili I don't actually have a fresh red chili

so I'm going to just use this chopped chili that I've got in a jar

some vegetable stock cube and some lime juice. And it says to toss together the squash, the vegetable oil and occasion season on a large baking tree

and roast for 35 to 40 minutes, tossing occasionally until caramelized and tender

So while they put down the squash is in the oven roasting, it's

It says to add to a pan, a tablespoon of oil, the red onion, the celery, the garlic and the chili

I've put a teaspoon of that chopped chili in, so I don't like it too hot

It's covered with the lid and fry for 20 minutes, stirring occasionally until soft and translucent

So that's been cooking for 15 minutes. Now it says to add the roasted butternut squash to it, which is looking very nice, nice and caramelize

Now it says to add the vegetable stock. It's been dissolved in water

And then bring to the boil and simmer for 15 minutes. That's been cooking for 15 minutes and it says to blend it with a stick blender

So there it is blended up. That's looking very nice

It was looking a bit watery in the pan. I didn't think it would actually thicken up like that once I've blended it

So it says to serve it with a swale of coconut yoghurt

top with a sprinkle of Cajun seasoning and coriander to serve. I won be using coriander because I really don like it By the way that soup recipe was from the Tesco website and I also link that below

So the third recipe with butternut squash is Jamie Oliver's squash and Horace rolls

So for that, we need yet more butternut squash, some feta cheese, some chickpeas, spring onions

some harissa paste, some ready to roll puffer. pastry and one egg

Now it says in the method, it says to cut slits in the butternut squash and then cook it in the

microwave but as I don't have a whole butternut squash I've just got this I'm going to

put that in the microwave. Okay so we've microwaved the butternut squash that's all soft and I've given a little bit of a

a mash then it says to finally slice the spring onions which I've done

done so I'm going to add those in. It says drain and roughly chop the chickpeas

I hope they're roughly chopped. I don't know how you roughly chop a chickpea like

So we'll add that in. And then it says to crumble in the feta

So let's get crumbling. We'll crumble in the feta and add the hirissa paste

I'm going to leave that to cool for a little bit because that butternut squash is quite hot

I forgot to say it also needed seeds, so I had some seeds in a jar here. I think these are sunflower seeds

It doesn't specify the seeds, so I'm sure they'll be fine. So while that's cooling, it says on a flowered work surface, unroll the pastry and cut at length of ways into two long even rectangles

That doesn't look very even, but we'll get the gist. Roll a squash mixture into sausage shapes with your hands and lay along the centre of each rectangle

I'm getting my hands into the mixture here, which I don't like the feel of, to be honest

That does feel quite wet. I think it's because I've used microwave in the bag, but I'm not squash, so I'm not sure how this is going to work

But we shall persevere and try. Okay, I don't have enough mixture for the whole second bit, but no mind

I would say it's brush the pastry with the beaten egg, which I haven't already eaten

Let's just get this egg beaten. So do I brush both sides to think

We'll brush both sides, I'm probably wrong but I'll go with it

This is going swimmingly. All right, let's fall dead over. Right, I can see it is bursting out in places

Press down with your fingers or the edge of a spoon to seal the joints

Now, I remember doing this at school, or bulk. So I'm going to use a fork

Yeah, if I did this again, I would definitely use an actual buttonut squash rather than the one I microwaved in the bag because it's very watery

And I can see it's seeping out the edges. Cut the rolls into the size as you want and space them out onto a bacon tree

So what size sausage rolls do I want to want to want to trim? itself I've got a lot of pastry on the end there

See that size? It says these will keep in the fridge for up to three days

I'm wondering if you can freeze them. You probably can. I almost like that

I have a feeling these are going to be a disaster. Right, they're looking like a pig's here

So I'm going to brush them with the rest of the milk. And then they're going to go in the oven

We're going to scatter over some seeds. You can put any seeds you want on here, I think

And then it's going to go in the oven for 25 minutes

or until puffed golden and cooked through. So we'll put them in and see what happens

So there's the sausage rolls out of the oven and actually they don't look too bad, do they

They're quite crispy, but mind I didn't make the pastry. But they actually look okay

And the filling didn't ooze out like I thought it would. So I'll leave note on the screen as to what the tasted like

when I get around to eat one. So those were my three butternut squash recipes

All in all, I think they all turned out pretty well, considering that I don't really cook
