Baked pasta in arrabbiata sauce - Recipe Cuisine: Italian| Recipe Category: Lunch | Dinner Prep Time: 10 mins | Cook time: 40 mins | serves: 3-4 | Author: Jeyashri suresh Penne pasta 2 cups Pasta sauce or tomato puree* 3/4 cup Garlic 2 tblsp (finely chopped) Tomato 1 Fresh red chili 2 Cream 2-3 tblsp (optional) Pepper powder 1/2 tsp Sugar 1 tsp Broccoli 4-5 florets Olives few Mozzarella cheese 1/2 cup Olive oil 2 tblsp Salt few pinches(if needed) *If using tomato puree add 2 pinches of oregano and few basil leaves(optional)while making the arrabbiata sauce. Method: In a pan add olive oil and add the finely chopped garlic. Chop the red chili and add them too. Cook for a minute and add the chopped tomato. Saute for 2 minutes. Add the pasta sauce to this now. I used store bought pasta sauce. You can add home made pasta sauce. If adding tomato puree, add oregano to this. Do not add too much, just 1-2 pinch will be fine. Mix well. Add sugar and pepper powder to this. Mix well and bring this to a boil. Keep the flame low and cook for 10 minutes. Switch off the flame. Arrabbiata sauce is ready. Let's move on to make baked pasta. Cook the pasta in enough water as per the instructions in the packet. Reserve 1/4 cup of pasta cooked water and drain the excess water. Keep this aside. Blanch the broccoli florets. Just put them in hot water for a minute and take it out. In a pan add the arrabbiatta sauce,olives and the blanched broccoli . Add the fresh cream to this. This is optional. I wanted a creamy texture so i added this. You can add white sauce also instead of cream. Add the reserved water, which we kept aside. Mix well and add the cooked pasta too. Mix well. Transfer this to the oven friendly bowl. Top it with mozzarella cheese. Preheat the oven at 160 degrees for 5 minutes. Bake in the oven for 20-25 minutes,till the cheese melts and turns golden brown. Take out from the oven and rest this for 5 minutes. Cut and serve in portions. You can also bake in small oven safe bowls and serve individually
